Pumpkin pie

Pate Brisee (Short Crust Pastry):

1 1/4 cups (175 grams) all-purpose flour
1/2 teaspoon salt
1 package butter (125 grams), chilled, and cut into pieces
1/8 to 1/4 cup (30 - 60 ml) ice water


Pecan and Gingersnap Layer: (optional)

1/4 cup (25 grams) pecans, toasted and ground
1/4 cup (25 grams) crushed gingersnap cookies

Pumpkin Filling:

3 large eggs
2 cups fresh pumpkin puree or 400 grams pure pumpkin
1/2 cup (120 ml) heavy whipping cream or milk
1/2 cup (110 grams) light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 teaspoon salt


Pate Brisee:

In a food processor, place the flour, salt, and sugar and process until combined. Add the butter and process until the mixture resembles coarse meal (about 15 seconds). Pour 1/8 cup (30 ml) water in a slow, steady stream, through the feed tube until the dough just holds together when pinched. If necessary, add more water. Do not process more than 30 seconds.

Turn the dough onto your work surface and gather into a ball. Flatten into a disk, cover with plastic wrap, and refrigerate for 30 minutes to one hour before using. This will chill the butter and relax the gluten in the flour.

After the dough has chilled sufficiently, place on a lightly floured surface, and roll into a 13 inch (33 cm) circle. (To prevent the pastry from sticking to the counter and to ensure uniform thickness, keep lifting up and turning the pastry a quarter turn as you roll (always roll from the center of the pastry outwards).) Fold the dough in half and gently transfer to a 9 inch (23 cm) pie pan. Brush off any excess flour and tuck the overhanging pastry under itself. Use a fork to make a decorative border. Alternatively, you can trim the pastry to the edge of the pie pan. With the remaining pastry make decorative cut-outs (leaves, pumpkins, etc.) and with a little water, attach them around the lip of the pie pan. Refrigerate the pastry, covered with plastic wrap, for about 30 minutes before pouring in the filling.

Pecan and Gingersnap Layer:

Toast pecans in a 350 degree F (180 degree C) oven for 8 minutes or until lightly browned and aromatic. Cool and then place the pecans in a food processor and process until finely ground. Combine the ground pecans with the crushed gingersnap cookies. Press this mixture evenly onto the bottom and up the sides of the unbaked pie crust. Cover and return the pastry to the refrigerator while you make the pumpkin filling.

Increase the oven temperature to 375 degrees F (190 degrees C) and place rack in bottom third of the oven.

Make the Pumpkin Filling: 

In a large bowl lightly whisk the eggs. Add the remaining ingredients and stir to combine. Pour the mixture into the prepared pie shell and place on a large baking pan to catch any spills. Bake the pie for about 45 to 55 minutes or until the filling is set and the crust has browned (the center will still look wet). (A knife inserted about 1 inch (2.54 cm) from side of pan will come out almost clean.)

Place the baked pie on a wire rack to cool. Serve at room temperature with maple whipped cream. Store any leftovers in the refrigerator.

Makes one 9 inch (23 cm) pie.

1 кг. печени чушки, нарязани
2 с.л. зехтин
3 яйца + 1 белтък
100 гр сирене
1 малка глава лук, ако има пресен - 1 връзка
1/2 лъжичка черен пипер
1/2 настърган домат


Чушките и зехтинът се задушават в тефлонов тиган или тенеджерка за около 15 - 20 мин. След това се добавят останалите съставки и се бърка на много слаб огън, докато се сготвят яйцата, около 5-7 мин.

Pumpkin soup

Ingredients

4 tbsp olive oil
2 onions , finely chopped
1kg pumpkins peeled, deseeded and chopped into chunks
700ml vegetable stock or chicken stock
4 slices wholemeal seeded bread
handful pumpkin seed from a packet
1 tsp cilantro
1/2 tsp white pepper
salt


Heat half the olive oil in a large saucepan, then gently cook the onions for 5 mins, until soft but not coloured. You can bring to the boil previously the onion for 10 min, then remove the water (prevents stomachache). Add the pumpkin or squash to the pan, then carry on cooking for 8-10 mins, stirring occasionally until it starts to soften and turn golden.
Pour the stock into the pan, then season with cilantro, salt and pepper. Bring to the boil, then simmer for 10 mins until the squash is very soft. Purée with a hand blender. For an extra-velvety consistency you can now push the soup through a fine sieve into another pan. The soup can now be frozen for up to 2 months.
While the soup is cooking, slice the crusts from the bread, then cut the bread into small croutons. Heat the remaining olive oil in a frying pan, then fry the bread until it starts to become crisp. Add the seeds to the pan, then cook for a few mins more until they are toasted. These can be made a day ahead and stored in an airtight container. Reheat the soup if needed, taste for seasoning, then serve scattered with croutons and seeds and drizzled with more olive oil, if you want.

Солени кексчета (12 броя във форма за мъфини)


Продукти:

200 г сирене Фета или краве сирене
250 г пълнозърнесто или типово брашно
1 с л накълцани иглички от розмарин
1 шепа ядки по избор (слънчоглед, тиквено семе, орехи)
2 1/2 ч л бакпулвер
1/2 ч л сода
смлян черен пипер
1 яйце
80 мл олио или зехтин
300 г кисело мляко


Фурната се загрява на 180 С.
Форма за мъфини (12 броя) се намаслява или се застила с хартиени кошници.
Сиренето се намачква с вилица на едри трохи.
В голяма купа се смесват брашното, ядките, розмаринът, бакпулверът, содата и черният пипер.
В друга купа се разбъркват яйцето, киселото мляко и мазнината.
Мократа смес се изсипва при сухата смес. Накрая се прибавя и натрошеното сирене.
Тестото се разбърква много бързо, колкото да се смесят двете смеси.
Пекат се 25-30 минути на средна скара.Охлаждат се 5 минути във формата, след което се изваждат. 
Поднасят се топли или студени.

Овесени бисквити

Продукти:

• 1 чаена чаша орехи
• ¾ чаша вода
• 1 ч.ч. кафява захар
• 1 с. л. (с връх) ленено семе
• 1 ванилия
• ¾ ч.ч. ръжено брашно
• ½ ч.л. сода бикарбонат
• ½ ч.л. сол
• ½ ч.л. канела
• 3 ч.ч. пълнозърнести овесени ядки

Смиламе орехите и овеса с кухненския робот на ситно. Орехите използваме, за да осигурим необходимата мазнина на бисквитките.
Отделно, с шейкър-каната, разбиваме лененото семе с 3-4 с.л. вода, така че да се получи гъста почти еднородна каша. Това замества яйцето от стандартните рецепти. 
Добавяме „яйцето” към орехите и овеса и разбих. Останалите съставки добавяме една по една като разбиваме търпеливо. Получава се почти суха смес. 
Бавно добавяме водата, разбивайки, докато се получи лепкаво тесто. Не течно, но не и достатъчно твърдо, за да се омеси. 
Фурната трябва да бъде загрята до 180° С и през това време посипваме на дъното на три тавички съвсем мъничко брашно. По-удобно е да се постели на бисквитките хартия за печене, ако имате такава.
Със супена лъжица изгребвате топчета колкото орех и поставяте в тавичките на разстояние около 4 см. едно от друго.
С навлажнена ръка заглаждаме отгоре и оформяме бисквити с различни форми. 
Пекат се точно за по 17 мин. на всяка тава. Нито повече нито по-малко. Ако извадите малко по-рано няма да са хрускави. Ако закъснеете, започват веднага да загарят. 
След като извадите опечените бисквитки, изчакайте да изстинат за около 10 мин. 
Отлепете внимателно всяка бисквитка от тавичката. Отлепват се много добре, стига да сте наистина внимателни.
